Hello, I want to use the black and white photo that I own for the WordPress theme and for the download package.
Should the black and white photo be the same as the demo photo?
For example, if I used a photo of a cat in the demo, should I use a black and white photo of the cat instead?

No. You can use any placeholder images for the download package.
