Hi, how many type of documentation can I include in the zip file that content my themes?
Can it be html file or an wiki website?

Documentation bust be on HTML or PDF format.

If you are talking about wordpress theme then:
Themes must have documentation available online that is publicly accessible. So, a single html file linking to the full online documentation is fine but you can include offline documentation also. Documentation can be html or pdf format.
