I would like to offer a part of my works at Envato Market exclusively. Is that possible? Where can I mark the files as exclusive? Unfortunately I could neither find in my profile nor here in the forum something about it.

You can have an exclusive account or a non-exclusive account… you can’t swap and change specific items within those account. You can, however, have one exclusive account and one non-exclusive account, and upload accordingly.
