Is it possible to install the Photography theme without WooCommerce. I don’t use it and it adds too much extra stuff.

I think possible. just you will ignore the WooCommerce plugin and WooCommerce related plugin installation request.
Better to ask this directly to the theme author to get their answer.
You can ask your pre-purchase query directly to the Item author by posting comments going through the Item Comments page. Item author will answer your query.
