I’m a rookie and there’s something I’m curious about: which do you find is best, recording guitars with just a click track, or recording them with the whole backing of your song?

For me it’s different in different songs. Also depending where the idea came from and what role the guitar has.

I prefer to record with the whole track as that is the context It will sit in. If its acoustic I fond that a backing track bleeds less through the headphones than a click.
Sometimes I start with the guitar track with only a click, but then I do a new take after the rest if the track is done.
