if we remove any listed item from our portfolio on themeforest, would all of ratings for that item would also be vanished and would that also affect the overall rating of author?

Yes! If item removed then that item review also removed and it will effect with your account all reviewed.
While the reviews will be removed (or rather unaccessible for visitors since they are linked from the item page), your overall ratings WON’T be affected. You can find authors who removed all or most of their portfolio and you will see the number of ratings on their profile page is much bigger than sales for their existing items.

Author overall total ratings will not be affected but removed item ratings will not be accessable.
