We were interested in the Jupiter theme for our project, but we realised it doesn’t come with PSDs and that is a must for us. Do you know an equivalent (or close enough) theme that does include responsive PSDs ?

You are highly unlikely to find a theme that includes ‘responsive’ (I am assuming you mean multi device versions) PSDs as they are not a requirement for themes, many devs don’t bother with them and just develop straight off.
There’s a couple of the big themes that have PSD versions for sale but not showing ipad or phone views
