Hey ilmosys,
If you want to record instruments, you’ll need a decent microphone (cardioid condensers are recommended for general and acoustic recording) and an audio interface to power the microphone and handle the audio conversion - it will also act as your computer’s primary sound card. I use two condenser mics (Audio-Technica AT2020 and AT2021) and my interface is a Focusrite Scarlett 2i4.
If you want to record electric guitar, you can run the guitar directly into the audio interface and use a virtual amp suite like Guitar Rig or Amplitube, or alternatively use a mic (preferably a dynamic mic) to record from a real guitar amp.

Whoooo boy, that’s a huge topic. I recommend buying a book or two, perhaps Audio Engineering 101 by Tim Dittmar or The Home Recording Handbook by Dave Hunter or Home Recording for Beginners by Geoffrey Francis. I like the Tim Dittmar book because it has a fairly decent section on microphones.
