I am using the Grid/List Layout With Carousel plugin via Visual Composer on my Divi theme. It looks great. My only issue is that the excerpts seem to pull short code opposed to the actually custom excerpts i have typed in the except section of each post. Any one know how to get the manual excerpt to show up on the grid layout?

You’ll have to look at their code to see what they use. If they’re using the_excerpt(); it would show either the user-supplied excerpt or the auto-gen excerpt with shortcodes and tags removed, and it doesn’t sound like either of those. Why not ask the author?
