It all depends what you're animating. I generally go into the graph editor and customize the eases anyway.
The most important thing is to look at the speed curves (or the value curves) in the graph editor and understand what is happening. Then it will become completely obvious to you when to use an ease/ease, when an ease in and when an ease out.
There may be a special Felt Tips tut on just this subject called "Super Smooth Curve". You know where to find it.

"Eases" means that those keyframes provide a more natural progression between a sets of values, correct?
When you said that you adjust the values in the graph editor, are you adding the keyframes first and then adjusting on the graph? correct?
