If subscribe to unlimited downloads and then cancel in three months, do I keep the downloads I made?

No, you will not retain access.

Projects using items from elements need to be completed whilst you are still subscribed.

I think if you cancel the subscription within three months you will not lose any of the pre-downloaded data.
