Can I see what happens and than switch back to exclusivity if i didn’t like being non-exclusive?
Basically can you switch exclusive-nonexclusive more than once?
Yes but every time you have to wait a month.

How do you know that?
I tried it once before, they told me I had to wait a month for no reason. Contrary to the community, the actual staff and company aren’t very friendly, that’s why they rarely talk with authors.
Since you apply to NON-exclusive request you’ll see notice which date you allowed to become non-ex. and backwards.
